This is not a carb counting diet- its not a low carb diet- please do not pay attention to the carbs. Fat free or 1% milk is allowed.
Your menu looks ok, but lacks vegetables.
I dont see any vegies with breakfast or lunch (Apart from the onions and thats not enough), and then the only vegie at dinner is brocolli. |

I love scallops too and often have them in a stir fry - but I add a heck of a lot more veggies than you! Try it with red/green peppers, garlic, onion and broccoli.
My husband also makes turkey bacon wrapped scallops whenever we have company! He makes them on the bbq and sometimes adds a small chunk of pineapple (but that fruit should be avoided until late in P2).
I use 1% milk everyday with my cereal, but stick to skim when it comes to coffee beverages. |

Here is the phase 1 recipe I use, just substitute and approved "butter"
1 1/2 pounds bay scallops
1 tablespoon garlic salt ( or i substitue garlic powder so not so salty)
2 tablespoons butter, melted
2 tablespoons lemon juice
--------------------------------------------------------------------------------
DIRECTIONS:
Turn broiler on.
Rinse scallop and place in a shallow baking pan. Sprinkle with garlic salt, melted butter or margarine and lemon juice.
Broil 6 to 8 minutes or until scallops start to turn golden. Remove from oven and serve with extra melted butter or margarine on the side for dipping. |

Take your scallops and marinade them in your favorite salad dressing for about 15-20 minutes. My fav is a basil balsamic vinegar dressing. Then either pan fry or grill. I prefer using an indoor grill where I can regulate the temp, Do this with fish, shrimp, scallops. Delish.
This is another of my Fav. Another one for shrimp or you could use scallops or shrimp is:
Shrimp with Basil, Garlic, and Tomatoes
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup cherry tomatoes -- or grape sliced in half
5 large fresh basil leaves -- chopped
1 serving Kosher salt and freshly ground black -- to taste
1 1/2 pounds shrimp -- shelled and deveined
1 serving Extra-virgin olive oil -- to coat pan
1 large clove garlic -- minced
In a medium bowl, toss the tomatoes with the basil and season with salt and pepper, to taste. Set aside while you prepare the shrimp.
Pat shrimp completely dry with a paper towel. Heat a large skillets over medium heat, Season 1 side of the shrimp with salt and pepper. Add enough oil to lightly film the bottom of the pan and turn the heat up to high. Invert the pan of shrimp so they all fall into the skillet(s) at once. Saute the shrimp, undisturbed, until they turn golden brown on the bottom, about 2 minutes. Add a bit more oil and 1/2 the garlic to each pan. Turn the heat off and turn the shrimp over with tongs. Cook the shrimp for 1 minute in the residual heat of the pans. Transfer the shrimp to the bowl with the tomato mixture and toss to combine. Divide the shrimp among 4 plates or a serving platter and serve hot or at room temperature.

Watch out! You had two servings of nuts! Don't go nuts with the nuts! One serving per day for right now. Try a protein serving with your celery snack. Hummus is tasty!
Scallops are served simply in most restaurants. Get a skillet nice and hot with olive oil and throw those bad boys in and cook them on each side for a few minutes (until the natural sugar in the fish causes browning) I love this dish with green bean almandine. Goodluck! |

I do not like fish but have started to try eat some that arent "fishy". Salmon isnt too bad. Is scallops very fishy...what do Scallops taste like? I know that is a silly question.
Thanks

Definately not enough veggies. You should be having a minimum of 4 1/2 cups of veggies everyday.
Breakfast
2 scrambled egg whites with cheese
2 canadian bacon
water with lemon
try scrambling some tomatoes & onions or peppers with your eggs and maybe add in a small V-8 or tomato juice to get some morning veggies in.
snack
15 almonds
Add in a few grape tomatoes or cucumber slices here
lunch
onions and scallops stirfried in olive oil
How about a tossed salad to go with this?snack
celeryw/ peanut butter
dinner
grounded chicken patty (chicken burger)
grilled fish fillet
broccoli
have one or the other on the chicken burger or fish fillet...to much protien. The broccoli is good, but how about a salad or some steamed fresh green beans as well?[/b] |

Scallops are great! It's almost like a shrimp had sex with a tilapia fish. Taa-dah you have a scallop. They come in various sizes and I think the medium sized are best. I like the scallop because it is so quick to cook up. It can be pricey! Watch out! 1/4 a pound for an individual is enough protein for one person for one meal. Depending where you are in the world it might be cheaper than here in Texas. I spend on average $9.00-$12.00 a pound. And no, it isn't fishy if it is fresh! |
