New Salad Ideas

Hi everyone, I am getting sick of eating garden salads. Does anyone have a salad they made up or like? I am trying to find new ways of revamping my salads, plus I want the family to eat it to.

Tuna Pea Salad

Can of Tuna
Peas -as much as you like
Lettuce -as much as you like
Mayo- just enough mayo to slightly cover everything (1 to 2 tbsp depending on how much veggies you put in. If you add a lot of veggies,you may want to tuna first, then add veggies with a little more mayo)
Salt & Pepper to taste.

makes a couple of serving depending on how much veggies.

What I've also done is not put lettuce in the salad, but use leafs to wrap up like a little sandwich.

Here's something I've recreated at home that I had at a restaurant. It was called a chopped chicken salad, I think. They chared 10 bucks for it *yikes* it wasn't even that big, and didn't have much chicken in it. So when I ate it, I told myself I'd start making it at home. Family loves it so much, 7 yr old son asked me to pack it for his lunch to school.

shredded romaine lettuce
shredded spinach (added just for extra vitamins, omit if you don't like taste)
diced fresh tomato
sliced peppercini peppers
small slices green onion
shredded carrot
sliced olives (any color)
diced cucumber
diced celery
diced cooked chicken
cheese cut up into tiny cubes (any flavor)
diced red onion (just a little for flavor)
Italian salami sliced into little strips

The key to this salad is to make it in a bowl or plastic container big enough to pretoss the salad dressing. I usually use some sort of creamy italian or lately been using an Asian Ceasar dressing from Costco I love.

I love this salad....I omited the rameen noodles from the original it's still good and different.

Dressing
olive oil 1/2 c
Vinigar 1 c any kind
chicken broth 1/2 c or 1T dry
splenda 1pk of equal,sweet and low
shake well

Nappa cabbage (cut until you see yellow part)
red onion (thin)
red cabbage
Shreeded carrots
Slivered almonds
Sunflower seeds

If I make this I leave the dressing on the side so it doesn't get soggy. If you are serving it with dinner you can mix it and wait like 1/2 hour then serve. Just a little something to break the monotany! Enjoy

The simplest salad in the world:

1 can of black beans - drained/rinsed
1 can of chick peas - drained/rinsed
1 avacado - sliced
Light crumbled feta cheese
Squeeze of lemon juice

Mixed these all up together and keep in fridge. It makes 4 servings of yum! Good carbs to fuel you, so this is a lunch favourite of mine. It lasts a few days before the avacado starts to turn too brown. Alternately, you could add the avacado each time you eat it.

I take all my bits and pieces of left over veggies, add some diced tomatoes and mushroom and/or zucchini and marinate in an Italian dressing. It does make for a change.

Also my local markets had tomatoes for < $0.33/lb this week so for a change I did tomatoes with chive/green onion and italian dressing (marinate for 30-60 min.). What was left over I did with some leftover green beans and took to work for lunch. Quick easy veggies for any meal.

I cut up grape or cherry tomatoes, add a drizzle of olive oil, a spoonful or so of feta, and some fresh ground pepper... stir and eat!

Check out the salad section in my recipe summary in the Food and Recipe Area of this forum index. There are lots of ideas for salads and coleslaws. My favorite recipe that I added there is the Overnight Coleslaw which we like because I can make it the night before and not fuss at dinner time.
