I need some non-egg breakfast ideas!

I am gagging at the thought of eating eggs tomorrow. I tried the mock belgian waffles and it just tasted like eggs with sugar. :roll:

The main reason I want to get to phase two is to have a non-egg breakfast, lol.

Well, I like eggs, so they don't bother me at all. But, what I often do is make extra the night before's dinner and often eat that or some other leftovers for breakfast. Who said you need to eat traditional type breakfasts for breakfast? I have thrown that idea out the window.
I like to make some type of bean soup, enough to last me the week or so. Then for breakfast, I will heat up the soup, any leftover vegetable I have and maybe a slice of ham.
This doesn't take up anymore time than the eggs to make. I usually have a couple of slices of ham ready in the freezer, just stick in the microwave with the vegetables, place a serving of soup on the stove, in a couple of minutes, I'm eating.

Here is a link to recipelover's sticky with all kinds of good suggestions for EVERYTHING. BTW, no where is it etched in stone that you HAVE to have eggs for b'fast.......if you want to do deli roll-ups, do it! Cottage cheese? Go ahead? Leftover last night's chili? Why not? Don't be so rigid in sticking to those menus in the book! Ya gotta learn to explore, be creative, and just generally start learning to LIVE this WOE. Otherwise, eggs will become evil and you will start counting them in your sleep!!! :twisted: :wink: :D J/K

I know you don't HAVE to have them for breakfast... I think my problem is that I am accustomed to a Weight Watchers muffin and some coffee so my mouth REALLY wants a pastry, lol.

I really enjoyed the mock french toast (make sure to cook thoroughly, otherwise they break while flipping. They take a long time to cook) and mock cinnabon. Here are the recipes. Haven't tried the custard yet.

Mock French Toast,
which came out more like crepes. They were really delicious. I doubled the recipe and modified it a bit, and it made 8 crepes.

1 c. part-skim ricotta
1 egg + 1/4 c. Egg Beaters (or use 2 eggs)
2 packets Splenda
2 tsp. vanilla
cinnamon (to taste)

Blend everything in blender. Spray frying pan with cooking spray. Cook each crepe over medium to low heat (it takes awhile to cook--don't touch them until they look sort of dry on top). They are very delicate and are sometimes difficult to flip. The trick is not to be too hesitant -- they bend a bit when you're trying to slip the spatula underneath, but just keep pushing and then flip quickly! Some of mine ripped, and some I was able to flip in one piece. Either way, they were delicious and a great alternative to something like pancakes or french toast (definitely more crepe-like, though).

Mock Cinnabon:

1/2 C. cottage cheese
1 pkt. splenda
tsp cinnamon
few pecans

blend with fork
15 sec. in micro to take off chill

Baked Custard
2 eggs
1 cup 1% milk
3 Tbs splenda
1 tsp vanilla
Nutmeg
[I added ½ low fat ricotta cheese, which made it much creamier. I also double this recipe. One can never have too much custard!]

Preheat oven to 350. Pour very hot water into a square or rectangular baking dish large enough to hold 3 (1/2 cup) pyrex cups. Blend all ingredients but nutmeg together very well. Pour into 3 pyrex cups. Sprinkle with nutmeg. Place in hot water in pan. Bake 25 minutes for milk, 30 or more for soymilk. Eat warm or chilled.

That egg custard is what keeps me going. It tastes so naughty!! Plus it smells really good while it's baking. My beanpole boyfriend even popped his head out of his room to see what I was up to (a novelty, as he's just bought a new computer and an iPod)!

I highly recommend the egg custard for breakfast or dessert. It's awesome. But I, too, look forward to Sunday and my first bowl of cereal. :)

I made the phase 1 cocoa custard... it was GOOOOOD! Exactly what I needed to feel like I had some sweets for breakfast.

will the custard still work if you dont have pyrex cups ???? What could I use instead ??
This sounds so yummy. Im on week 2 of P1 and the eggs are getting old.

I'm so lucky, I LOVE eggs. Hard boiled, fried, baked, scrambled, sunny side up, omlets, fritattas, you name it and I'll eat it!
