Hi, I wondered if anyone else is coeliac and therefore on a strict gluten free diet? I have just completed P1 with reasonable success and am about to start P2. I cannot eat oats and in the past my breakfast cereals have been rice crispies or cornflakes. Also I have for years relied heavily on ricecakes as a bread substitute as I find gluten free bread indigestible.
To further complicate matters I am vegetarian (although I do now eat some fish).
I think I'm going to find P2 quite difficult with these limitations - any suggestions?

I do. I have not had any bread or flour products for years. I also relied on brown rice cakes. I never tried the gluten free bread...it doesn't look worth it, lol.

I also have further limitations in that I am allergic to all dairy and tomatoes.

I am a bit of a Health Nut. I only eat organic chicken and turkey. I eat fish and eggs, but no red meat.

I am still on P1, so I don't have answers regarding what to do in P2 as I haven't even looked at it yet.... I think, when I get to it, I will just be so happy to have the fruit back and will want to ease foods back in that are not allowed, so as not to go nuts.

Hope I have been a tiny help. I would be interested to hear what you have found to be your answers. :)

I'm supposed to be borderline but I still eat WW bread sometimes. However, I rely on rice and corn products heavily. It's a bit more difficult to manage the diet with these restrictions but not impossible. Check out your health food store for gluten free products.

Geekgirl, you say you have not tried the gluten free bread as it does not look worth it.

The one I have used in the past is made by Juvela, it is the Fibre bread mix, and I have made it in a bread making machine and also in the oven. I would really recommend it, I liked it a lot and felt it was the nearest thing to bread I had had in years! The problem is that it upsets my stomach for some reason, not that it is unpleasant.

It isn't cheap, and it is likely to be very high GI, but you might like to give it a try. In the UK this sort of thing is prescribable by the GP, I don't know how it works in the USA but Juvela have a website I think.
