Flaxseed Pancake Recipe-ok for Ph. I?

Hi! I'm new and am in the second week of pI. I got the following recipe from browsing the prevention.com forum:

Flaxseed Meal Pancake

2 eggs
3 Tbsp. ground flaxseed
1 Tblsp. psyllium husks
1/8 tsp. salt
2 packets splenda
1 tsp. baking powder
dash vanilla

Stir until combined, let sit a couple minutes to thicken, add a couple tsps of water if you think its too thick. Pour into oiled or pammed skillet and brown on both sides. Makes 2 big pancakes. Serve with sugar free maple syrup or fresh fruit in P2.

I had this for breakfast this morning and I loved it, so I hope its legal! I also topped mine with some sf vanilla yogurt. I felt like I was having real pancakes...it didn't taste like eggs.

For those of you who may not know, ground flax seed and psyllium husks are recommended for help with constipation problems (you can buy psyllium husks at Target, either plain - tastes like cardboard - or its the main ingredient in metamucil! All I had on hand was sf orange flavored metamucil, so I used that!) I also added some cinnamon. I know this doesn't sound very appetizing but it really was wonderful.

For anyone tired of eggs and/or having regularity problems, this is good. Hope I will not regret it later today!

where do you find flaxseed and psyllum husks in the grocery store. at this point i am willing to try anything besides eggs :D

You should be able to find ground flax seed (make sure it's ground, or flax seed "meal" and not whole flax seed) and psyllium husks in the drug/vitamin section of most large grocery stores, or certainly at health food stores. If you can't find plain psyllium husks, just buy Metamucil...as I said, I used a Tbsp. of that sugar-free orange Metamucil and it was fine...Psyllium husks are the main active ingredient in Metamucil. I'm telling you, I thought this was delicious, especially after not having any cereal or anything like that for almost 2 weeks. I'm curious to know if anyone else likes it! The two eggs are the main ingred. in this recipe but it doesn't tast like eggs--it tastes like pancakes.

Whole flax seeds can also be ground in your coffee grinder.

As a side note about Flaxseed-it is a terrific Omega-3 supplement, even better than fish oil, so if you're into vitamins/herbs, flaxseed is definitely beneficial.
I also saw the Flaxseed Pancake recipes and it sounds to me like a good substitute. I have flaxseed on hand so I'm going to try it.

oH MY GOD....I just made these pancakes for dinner and they were SOOOO good!! I'm on day 11 of P1 and have eaten a small country's worth of cottage cheese with cinnamon for breakfast --- these pancakes absolutely hit the spot!!!! Fortunataly, there's a great food co-op where I live, so I can easily get even the funkiest of ingredients; finding the psyllium husks and ground flaxseed were no problem.

I'm so excited!! This makes me wonder if I can't come up with some sort of 'bread' substitute using egg whites/meringue with the flaxseed -- something edible and stiff enough at least to pile on a few slices of lean lunchmeat!

Anyway, THANK YOU for this delicious recipe.
...as to whether it's really OK for Phase I, I checked the label on the flaxseed I got & it says:

Cal. 60
Ca. from Fat 40
Total Fat 4.5g
Sat. Fat 0g
Trans Fat 0g
Cholesterol 0g
Sodium 0g
Total Carb. 4g
Dietary Fiber 4g

So this sounds pretty good to me! Not sure how the psyllium husks break down, but whatever it is, a tablespoon or two can't be too bad!

My first instinct was that it wouldn't be p1-appropriate because of the grains, but then I took a closer look. Flax meal isn't a grain. It's a ground-up seed, one that has many health benefits as mentioned above.

The psyllium husk should be fine, too, since Metamucil is okay for p1.

The only p1 issue I see here is with using sf vanilla yogurt as a topping. Only fat-free plain yogurt is approved for p1.

The pancake looks great. This is a keeper!

I just made this this morning (ground flax seed in my coffee grinder last night to prepare.) I had to use the orange metamucil as well. It made 3 medium sized pancakes. The first one, I took a tiny taste of and...WOW. It was gone before the second finished cooking. Nothing on it at all. I ate the other two with a little sf syrup. These are just plain good, diet or no diet. (If I were to make these for someone off the diet, my kids, for instance, I'd use maybe a big teaspoon of honey to replace the splenda. Oh, because I used the metamucil, I didn't add any splenda to the recipe. Didn't need it at all and the orangey flavor was great.)

For someone who hasn't had bread in 5 weeks (gluten probs) this made me feel like I was cheating BIG time. :D I'm going to make these for dinner one night with a sausage "gravy". That'll be yum!

I was just wondering, because of the flaxseed and psyllium, do these pancakes cause any....um....stomach distress....or....laxative effect? I'm planning to make these tomorrow morning, but we are taking a rather long car trip, and just want to make sure! :oops:

cheermomma - This diet has a constipating effect (especially during the first couple weeks), but I ate the pancakes last night and then went 'as usual' this morning. I don't think they'll send you running to the bathroom or anything, but if things have been a little stopped up, they'll return you to normal -- so you may have to go during your car ride, but it won't be explosive or anything (sorry if that's gross!).

YEAH...so happy to here. I am gonna make these today. Yeah i was gonna right a message last night, because it is just ground flaxseed, NO grain.... So tasty, so low calorie anD SOOOO good for you. Nice thing, is that its only $2.99 at GNC. I think thats pretty cheap. Plus Ive been struggling with the constipation thing. I usually and pretty regular and now, I am experiencing the bathroom only every other day. I started adding beans because I need the fiber, but this flax seed meal is a good source of fiber. its carbohydrates are just fiber, so it passes right thru you. YEAH!! hehe. ok im just excited because this taste so good.

I havent tried the pancakes yet but I have been eating these. They remind me of gingerbread (I used SF maple syrup but vanilla would be good too) and I tried it with a little FF Cool Whip- it was quite tasty!

FLAXMEAL CINNAMON MUFFINS

3 eggs
1/4 cup plus 2 tablespoons oil
1/4 cup sugar free syrup, such as Da Vinci
2 tablespoons water
1 tablespoon vanilla
1 cup flaxmeal
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 tablespoons cinnamon
1/8 tsp salt

In a medium bowl, beat the eggs with a fork. Beat in oil, syrup, water and vanilla. In small bowl, combine remaining dry ingredients, then stir into egg mixture. Let stand 5 minutes. Spoon into 10 well-greased muffin cups (without papers). Bake at 350º 12-15 minutes, or until they are lightly browned and seem set to the touch. Remove from tin at once to cooling rack. Store in refrigerator.

Makes 10 muffins (1 net carb each)
Can be frozen

I used extra cinnamon and a little splenda to make them sweeter. You can find flaxmeal at Trader Joes in the vitamin section and I believe GNC carries it as well.
