Does anyone know if you could substitute spaghetti squash for carrots in recipes where carrots are grated? I am looking for something to go into my German coleslaw. It called for shredded cabbage and carrots in equal quantities tossed with a hot vinagrette salad dressing topped with crumbled bacon. Cabbage alone is bland. I tried jicama but it fought with the dressing. I thought that if I lightly cooked the squash and then shredded it that it might work. At least visually it would be closer. I think I miss potatoes and carrots more than anything else.
If anyone has any ideas for a carrot substitute I certainly would appreciate it. |
