Hey all-
This was one of my favorite pasta recipes before I started SB'ing.. so I modified a little and have made it a couple times since starting SB.
Hope y'all like it...
1 Spagetthi Squash (med to large)
1 Pound boneless/skinless chicken breast
1 8 oz jar artichoke hearts (Marinated is okay- but watch- some marinated ones are no-no's.. just check the label).
1 can Black olives
1/4 cup olive oil
4 gloves minced garlic
1/4 cup chopped parsley (fresh)
Red pepper flakes (or ground cayenne pepper) to tatse (I put a bunch in b/c I like it spicy :P )
1. Remove seeds and cook spagehtti squash according to directions (I put mine on a broiler wth water in the bottom and let the water steam it). Scrape strands from squash and place in a bowl.
1. In skillet, heat oil and saute 2 cloves minced garlic, parsley and red pepper flakes until garlic is tender and ready.
2. Toss Oil/garlic/parsley/pepper with "spaghetti"
3. In same skillet, combine artiochoke hearts (w/ marinade), chicken (diced into pieces) and remaining 2 cloves garlic until chicken is cooked through. Toss with "spaghetti"
4. Slice olives and add to "spagetthi".
5. Serve warm with a nice side sald and enjoy!!!! |
