Boy do I understand how you feel! We are going to start out our 2nd week with deviled eggs for breakfast. Otherwise I think you could do some other kind of protein like turkey roll-ups, even do soup as long as there is protein in it.

Leftovers and lunch for breakfast is my solution. Chicken sald, leftover steak, leftover fish, etc.

Do the mock pancakes interest you? Even though they are made with eggs and ricotta, they faked me out enough to give me a break from eggs.

Here's something that's really yummy and quick!

Here's what you need:
'Budding' brand beef lunchmeat (found by the bologna in grocery stores)
Dill pickle slices
Cream cheese (maybe even ricotta, though I've not tried it)

Cut up some sliced dill pickles to about an inch in length, smear some cream cheeze on one of those thin slices of lunchmeat, then put a piece of cut up pickle in the middle of the meat slice with cream cheese on it and fold it up like a little burrito. If serving at parties, you can spear the meat with a toothpick so it looks neater and doesn't unroll on its own. It's yummy, quick, and has very little carbs, if any.

Debster - thank you so much for reminding me!!! I had these at a party once and thought they tasted really good! And now that you mentioned it and they're all items we can have - I'm SOOOOO going to the store to get the ingredients to make these!!!! Awesome snacks! Thanks again!!!
