My husband has been very supportive of my diet, and came up with this "South Beach friendly" recipe. SO FILLING AND DELICIOUS! In a rut? You must try this! Please reply with your feedback!!!

SPICY CHICKEN CITRUS SOUP

2 boneless, skinless chicken breast halves (grilled or sauteed)
2 cans chicken broth
5 scallions, chopped
juice of one lemon or lime (fresh only!!)
6 fresh mushrooms, thinly sliced
4 Tbsp coarsly chopped fresh cilantro
2/3 cup very finely shredded cabbage, loosely packed
3-4 dashes of Tabasco brand Habanero pepper sauce

In a large saucepan, begin heating the chicken broth over medium high heat. Add the chicken, scallions, lemon or lime juice, mushrooms and habenero pepper sauce. Continue cooking until heated through, but not boiling. In 2 large individual serving bowls, place 1/3 cup of the cabbage, and 2 Tbsp of the cilantro, and ladle 1/2 of the soup into each bowl. Let stand for one minute to let the cabbage slightly soften. ENJOY!

Yield: 2 large servings
Preparation time: 15-20 minutes

This sounds tasty! I'm definitely going to try it - probably tonight, it's a perfect soup night. I bet bean sprouts and basil would be excellent toppers to this, kind like a Pho-

My husband and I are big fans of the Habenero Tabasco sauce, but were really disappointed to find that it has corn syrup in it's ingredients list (whicle the 'regular' tabasco doesn't). We're back to using the regular Tabasco and on the look out for non-sweetened habenero by other manuf'g.

kpw----I sure hope you enjoy the soup recipe! It has become a staple for lunch at my house. It is quick, SO filling, and such a nice change of pace! You know, I noticed the corn syrup on the habanero tabasco too, but it is used SO sparingly that I don't think it will make any difference. I eat this soup all the time using the habanero tobasco and I have lost 26 lbs since Jan 1! Thanks for posting the reply! I was beginning to think nobody was going to try this soup, and it is AMAZING!!! I like the bean sprouts idea, so I may have to try that, and maybe the basil. Hmmmmm.....other Thai spices may be a consideration too such as fresh ginger and fresh garlic.......couldn't hurt! Hey! Let me know how it turns out, and which variations worked for you!

My husband and I were able to enjoy this delightful soup for lunch today. We did add some red pepper flakes and a 1/2 t. of light soy sauce to the soup bowls as well. I think we are going to use Napa cabbage the next time. This really reminds us of a nice Thai soup...minus the noodles....which is fine! Thank you for posting this.
