hi all, started the south beach diet two days ago, and ive been researching recipes to follow and i've noticed that all dessert recipes are ricotta-based?!
anyone know any desserts that don't involve it? i've never tried it before, it doesn't sound too appealing though........ :? |

| Get a good brand of riccotta part-skim - one that does not contain all sorts of junk, such as locust bean gum, etc... It is really quite tasty, even my husband liked it. |

| You can have sugar free jello and I also have had sugar free fudgecicles. Let me tell you though I don't think the ricotta desserts are that bad if you get really good ricotta. The lemon is very good! If you don't like the consistency try using a hand mixer and add a little skim milk it will make it more creamy. |

Someone here posted about mixing jello with ricotta.
So last night I took a package of sugar free lime jello, mixed it with 1 cup of boiling water and then dumped a carton of ricotta in it. Mixed it with an electric mixer and put about 1/4 cup of Splenda in it too. Then I let it sit in the fridge for about 2 hours.
It's fabulous. It tasted like key lime pie. I can't wait to try other flavors! |

| mmmm, sounds good, but do you need the splenda with the jello? Isn't the jello sweet enough? |

It wasn't sweet enough for me. I tasted it before it set. :) |

| One other thing I've tried was no-salt added fat free cottage cheese. I put it in a blender with some Splenda and vanilla, and it tasted a lot like liquid cheesecake for me. I just couldn't stand any more ricotta, no matter how good of quality. |

| You said a carton of ricotta. But the cartons come in two sizes. Which size do you use? |

a 16 0unce carton.
I tried putting sugar free jello in my cottage cheese, Lime* and it was good. I don't like low fat ricotta. If I die eating regular oh well. LOL Some things low fat just aren't good. Any way it was good. Some flavors seem to have an after taste though. Like raspberry is tooooo sweet. The citrus and peachy ones I like the tanginess I guess. I hope everyone is well. Dona |
