Okay...today is day two of my South Beach Diet. My husband and I are both on it, which helps tremendously. He has dared me to lose down to 140 lbs. That would be about 100 pounds to lose. I can't believe I'm actually putting this in writing and believing that it might be possible to lose weight that I've carried all of my life!!! :cry:

Anyway...day one wasn't that bad. I had two scrambled eggs and two slices of ham for breakfast. With a cup of coffee with fat free half and half and artificial sweetner. For my snack a rod of string cheese. I wasn't even hungry for my snack...but knew I needed to eat anyway. For lunch I had romain lettuce with blue cheese crumbles and dressed with lemon juice. For my afternoon snack I had broccoli and cauliflower and a low fat french onion dip. For dinner we had grilled chicken breasts and broiled pesto tomatoes and a salad dressed with balsamic vinegar and olive oil. Then for dessert sugar free chocolate pudding.

My Lord...that looks like more food than I've eaten in weeks. And I wasn't hungry at all during the day. I hope what everyone says is true and I can actually lose tons of weight and never feel deprived or hungry.

Please God, give me the willpower and the persistence to rid myself of these extra pounds and to be the person I know I can be. Please give me Your strength and I will seek You when times are hardest.

Okay....day two....HERE I COME!!!!!!!!! :D

Okay...through with day one now on to day two.

B - two hard boiled eggs
3 slices ham
6oz. vegetable juice
coffee with nonfat half and half

S - one rod of string cheese

L - Romaine salad with:
1/2 of an avocado, 1 small cucumber, 1 small tomato
dressed with balsamic and olive oil (seasoned with salt, pepper, and garlic)

S - celery sticks with dip made from ricotta cheese and pesto

D - haven't decided yet

D - Sugar free popsicle/fudgesicle


I notice that the more I move around, the better I feel. Too bad I'm an admin asst and chained to my desk for most of the day. :(

I am really struggling with believing that I can really accomplish a goal as crazy as losing close to 100 pounds. That's an entire person. That means I'll be a person I have never been, and that's scary. I just want to look good and feel good and enjoy life and not be hindered by my weight. I don't want to be the person that everyone says "has a pretty face" and nothing else. I've been told that my entire life. Oh Laura, you have such a pretty face. Phooey!

Yes you CAN do this!!!!!!!!!!

I have to lose 165lbs......so more than a person LOL, so far Im down 18lbs, and have never felt better!

This is a great diet and it looks like your doing great so far! Keep it up!

Wahoo...dinner tonight couldn't have been easier. DH and I went to the store to pick up some fresh fish and found that they had already cooked peel and eat shrimp on sale for $5.99/lb. So of course the DH and I picked up a pound for dinner. I was bad though and had Uncle Ben's long grain and wild rice, but couldn't stomach another salad. I saved some shrimp for a Shrimp Cobb salad for lunch tomorrow, I'll add the other half of my avocado from today, the other half of my tomato and some blue cheese crumbles. YUM!

Got some delicious salmon for a dinner this week as well as a london broil. Also picked up some SF popsicles, and for 15 calories you can't beat them!!!!!!!!

I'm already discovering something...I thought this would be easy with your hubby doing it with you, but he's constantly snacking. I have just decided that he knows what he needs to do and doesn't need me badgering him about it. I told him that he'll be sorry when I start losing and he isn't! :P I'm feeling better since dinner, but still have a nagging headache. I have to say though, I went throught he store and the only thing that I really wanted to buy that I couldn't was fresh cherries. They were on sale for $2.99/lb and I wanted some sooooo bad. I loooooove cherries and I couldn't have picked a worse time to start this diet. But alas, I did not buy any and kept my willpower strong. hehehe Hopefully they'll be back on sale in two weeks!

Allright....I'm closing the book on day two. Day three, here I come!

Oh my gosh!!! Your soo like me...the only thing I craved during P1 was fresh cherries!!! LOL. Everytime I went into the grocery store would wish I could have some...Now Im on phase 2 I had a bunch of them memorial day!! mmmmmm

My hubby was the same way, esp the first 3-4 days, he was constantly snacking...I tried to have a lot of vegies on hand so he wasnt just having nuts and cheese all the time. His snacking has slowed a little now...he still wants to snack more than me though.

Day three is almost over. I haven't left work yet...doing some overtime for some people.

Today's meals were:
B - two hard boiled eggs
3 slices of ham
3 oz vegetable juice (ACK...I can't STAND V-8, I'm going to have to find something else to drink)
coffee with fat free half and half

S - String cheese

L - romaine lettuce with 1/2 avocado, 1/2 tomato, blue cheese crumbles and 10 shrimp
sugar free jello cup

S - 1% cottage cheese with a squirt of lime juice, vanilla extra and Splenda

D - don't know just yet

S/D - probably SF popsicle


I've been really busy at work today, and that has kept my mind off of eating. I'm one of those boredom eaters, you see. I eat to keep myself busy. So today has been kinda crazy and really good. However, I really wish I was on my way home, but the OT money will be nice. There are just a lot of things going on in my marriage that cause stress, and stress makes me eat, but I've not fallen off the wagon as of yet. I'm hanging in there. As one of my favorite lines from Airplane! goes, "I sure picked the wrong week to quit sniffing glue." :lol: I think I picked the wrong week to start dieting :lol: , but if I didn't do it, I never would. I'd always find some excuse for not starting. I know me.

Just as a quick note this AM....I bought some Spicy Hot V8 at the store...and I can actually drink this stuff!!! I guess the extra spice is enough taste to allow me to stomach the whole can.

Wahoo!!!!

So for anyone not liking regular V8....try the spicy! (if you like spicy that is! :wink: )

Whew...what catching up to do. Friday was crazy hectic...trying to get a proposal out the door, a manager going to training in Barcelona next week and getting all my regular work done. Man...I'm surprised I could even eat...but I did. Here's Friday....

B: V-8 spicy hot 5.5oz can
1 hard boiled egg
2 slices ham
cup coffee with fat free half and half

S: cottage cheese with lemon juice, splenda, and vanilla extract

L: Romaine with sliced chicken breast, cucumber and tomato. Lite Italian and Balsamic vinegar dressing

S: 2 stalks celery with low fat french onion dip

D: grilled salmon, 1/2 of a good size tomato broiled with a little pesto, salad with balsamic and olive oil

Dessert: 2 sugar free popsicles

Hmm...fighting a little with feeling kinda overwhelmed with this whole diet thing. I hear people losing so much in the first week and I can't tell that much difference. I thought I could tell that I looked better in a t-shirt that I hadn't worn in a while this morning...but then I could just been fooling myself. Maybe it's because I just got back from dinner with the hubby and another couple who are good friends of ours. (luckily they're both beaching it as well right now) We went to dinner at Logan's Roadhouse (a steakhouse) and I ordered the T-bone salad. I didn't even eat all of it...but man am I paying for it. I have been in the bathroom since I came home. :( I can only imagine that there was something in the salad that didn't settle well, like maybe too full of fat or something. Who knows. Anyway...I am going to get a sewing tape measure out tonight and start measuring my arms, legs, waist, hips, bust, etc. and start tracking my measurements to check my progress. I think that might help me.

Anyway...went to hubby's cousin's wedding this afternoon. OH MY GOD...so much food!!!! I couldn't hardly stand it...but I did good...although I did cheat a little bit. But not bad if I do say so, considering what was there.

Well at least tomorrow's Sunday, day 6, and I'll be seeing lots of friends at church that I haven't seen in several weeks. I've had my hair cut since then (I had about 10 inches cut off about a week ago) and many of them haven't seen me yet. So it should be fun seeing everyone. Breakfast will be a snap...however, we're having a lunch meeting at church and who knows what they'll be serving. Dinner is very SBD friendly seeing as how practically all of my Sunday night bible study group is dieting in one way or another. I think dinner is going to be chicken breasts (grilled), grilled corn, sliced tomatoes with balsamic and olive oil, and a spinach and artichoke bake.

Here's my Saturday...

B: V-8 hot and spicy 5.5 oz can
2 hard boiled eggs
1/2 cup cottage cheese

S: String cheese

L: Salad (salmon, light mayo, balsamic vinegar, dijon mustard), roma tomato, cucumber

S: Wedding fare (3 small slices beef tenderloin, roasted vegetables {onion, zucchini, squash, artichoke}, tiny veggie spring roll, 1 chicken tender, 2 cubes of cheddar cheese, one glass of white wine) We didn't stay for the cake....so avoided that temptation

D: small salad (iceberg, 1 hard boiled egg, bacon, cheese, tomato, cucumber) with lite italian dressing and steak {I didn't even eat all of it...maybe half and the steak}

Dessert: whew...can't imagine eating anything else with my stomach torn up like this. maybe have a popsicle later....much later.... :lol:

Whew...what a whirlwind weekend. It was a good one though. I made it through Sunday...but I did have a lapse...and i paid for it! :( Sunday lunch was a working one for the leadership in our church. It was pretty diet friendly, except for the cookies and desserts on the table. :) One lady INSISTED we take some home for our sunday night group to eat. Well....they didn't all make it....first it was one mini eclair...then another...then another....then a couple of lemon bar bites....egads. I felt horrible afterwards, both for having cheated and from all the sugar!!! I think I've learned my lesson though. It may look good and even taste good initially, but you're probably going to pay for getting out of control!

Anyway....here was my Sunday....

B: cottage cheese with lemon juice, vanilla and splenda

S: didn't have one

L: chicken salad...didn't make it so it was probably full fat, broccoli salad with cashews and raisins and a dressing of some sort, small pear half with cheese

S: celery stalk with laughing cow light

Falling off the wagon episode :lol:

D: 5 chicken tenders, grilled with Emeril's seasoning, sliced tomatoes marinated in vinegar and olive oil, spinach and artichoke bake

Dessert: one SF fudgesicle

Wahoo!!! Day 8 is here. I didn't think I'd last a week, but it seems to be getting easier with each passing day. Plus I think I can tell that my clothes are fitting differently. I may be losing weight for the first time in my life...I can hardly believe it!!!!!!

Yesterday was crazy hectic, like it seems most my days have been. Hmm...maybe I need to kick my husband in gear so I can become a lady of leisure and stay home with my schnauzers! :lol:

Here is a recap of my day yesterday.

B: two hard boiled eggs, one slice of boiled ham, 5.5 oz can V-8, cup coffee with fat free half and half

S: 2 stalks celery (kinda small) and a wedge of La Vache Qui Rie light cheese

L: Tuna salad (can tuna, big spoon of SF sweet pickle relish, little bit light mayo, big spoon dijon mustard), cucumber, tomato, SF jello

S: Fat free cottage cheese flavored with a little SF cherry jello (Very good!!! helped with my craving for cherries...though not NEARLY as good as the real thing. The jello makes the FF cottage cheese more palatable)

D: Grilled London Broil, grilled tomatoes with pesto, grilled zucchini and squash marinated in balsamic, EVOO, garlic, S&P

D: Two SF fudgesicles

Day 8 is finished and behind me...Woo hoo!!!! I feel better each day and and really focusing on making this a lifestyle change. It was hard though last night, I had a serious chocolate craving...but the SF fudgesicles did the trick. I contemplated trying to make some kind of "milkshake" out of skim milk, ricotta, splenda and anything else...maybe SF choco pudding mix...but didn't. Maybe will try it soon enough. It's another gross, cloudy, hazy day in Atlanta, but it's cooler and that's a blessing. I'm not a hot weather person, go figure since I live in the South, but this makes June a little more tolerable. As long as we have sun for the weekend so I can work on my tan and have fun at the zoo. :D

Here is my day 8 recap:

B: Two hard boiled eggs, v-8, 1/2 decaf 1/2 choco flavored coffee with fat free half and half, two slices boiled ham smeared with 1 wedge laughing cow light and rolled up

S: none

L: leftover grilled steak marinated with balsamic, EVOO and garlic, 1 small cucumber, 1 roma tomato, SF jello cup

S: broccoli and cauliflower with LF french onion dip

D: sauteed chicken tenders with mexican sauce, gazpacho salad, romaine

D: two SF fudgesicles

I have such a funny story...today I was thinking about how weird I felt and decided it has to have something to do with the lack of BMs I'm having. My husband and I debated theories and I decided to try Metamucil to see if I could help things along. Well...I head off to the Walgreens after dinner to get some and while I'm standing in line I get this cramping...I'm like...oh man...I gotta get home!!! So here I am buying Metamucil and I have to go #2 so bad I can't stand it. Thought that was kinda ironic. Guess that spinach I had for dinner helped. hehehehehe

Day 9 has come and gone...Whew!

It was a great day...'cept for my belly problems...but I have realized I need more cooked greens in my diet. Dinner tonight has proven that for me. I'll reference a Italian Spinach Bake for dinner tonight. It was AWESOME!!! I have a friend that didn't think it would work, maybe not hold together and be runny. It was a little watery, but not bad at all!!!! I'll put down the recipe so anyone else can try it.


Laura's Italian Spinach Bake

1 lb. ground sirloin
1 medium onion, diced
1 clove garlic, minced
1 box Pomi chopped tomatoes
1 small can Contadina Tomato Paste with Italian Seasoning
Extra Italian Seasoning to taste
two boxes frozen chopped spinach, thawed and thoroughly drained
1 1/2 cups ricotta cheese
2 Tbls. Classico prepared basil pesto
1 cup part skim mozzerella cheese

Preheat oven to 400 degrees. In a pot brown the sirloin with the onion and garlic, then drain. Then add the chopped tomatoes and tomato paste and any additional Italian Seasoning that you'd like. Add back the drained sirloin mixture and let simmer about 10 minutes. While the sauce is simmering, combine the ricotta cheese and pesto and set aside. In an 8 x 8 baking dish put half the sauce in the bottom, then half the spinach, then all the ricotta, then the rest of the spinach, then top with remaining sauce. Sprinkle cheese over top and back for about 30 minutes or until bubbly. Enjoy with a green salad.

My day today:
B - two hard boiled eggs, 2 slices boiled ham, 1 laughing cow light wedge, small can V-8, decaf coffee with fat free half and half
S - None...busy and wasn't hungry
L - Salad (3 shredded chicken tenders, 1 roma tomato, 1 cucumber, 1/2 avocado, cilantro, vinegar, lime juice, EVOO over romaine), SF jello
S - FF cottage cheese with lemon juice, vanilla extract, and splenda
D - Italian Spinach Bake, salad with balsamic and EVOO
D - Walgreens Orange Flavored Water (SF) and two teaspoons of Metamucil - YUM! :wink:
